Main Courses

  • Cassoulet d’été—spa (serves 3 adults or 2 adults and 2
    pre-teen kids) $30
    Our light, warm weather version of the classic from the French southwest. We use chicken confit, lamb sausages & young flageolets beans—all simmered in a light tomato-garlic sauce. Spectacularly light and flavorful. Cassoulet is a one-dish meal. Serve it with our salade verte aux herbes and a bottle of Madiran or Cahors.
  • Poulet rôti complet—spa (serves 2) $15
    Whole natural chicken roasted with lemon and herbes-de-Provence served with roasted potatoes and our sweet onion-garlic sauce. Add our ratatouille for an authentic Provençal weekday supper. Serve this with a light red, slightly chilled, or a dry, crisp white.
  • Crevettes épicées à la vanille (serves 1) $16
    Slightly spicy sautéed jumbo shrimp with a savory vanilla beurre blanc sauce. Serve this with rice and our choux verts braisées. For wine we recommend Zaca Mesa California Viognier.
